Soda bread

Ingredients

makes 1 loaf
  • 150g plain white flour
  • 200g wholemeal plain flour
  • 50g oats plus extra for topping
  • 1 tsp salt
  • 1 tsp baking soda
  • 300ml oat milk
  • 1 tbsp apple cider vinegar

Directions

  1. Preheat the oven to 200°C. Line a baking tray.
  2. Add the apple cider vinegar to a measuring jug, then add the milk and let sit for 2 minutes.
  3. In a large bowl, add all the dry ingredients and mix thoroughly. Gradually add the buttermilk to the dry mixture, and stir to combine, until the ingredients come together.
  4. Form a ball of dough and place on the baking tray. Cut a deep cross in the centre, almost to the bottom. Sprinkle a few oats on top and bake for 30 minutes.
