Pancakes
Ingredients

- 150g plain flour
- 8g baking powder, or Paneangeli Lievito Vanigliato
- 1 tbsp apple cider vinegar
- 250ml oat milk
- Vegan butter for frying
Directions
- Add the apple cider vinegar then oat milk to a jug and let sit for 2 minutess without stirring.
- Whisk together the flour and baking powder.
- Heat the pan to medium-high heat, then add about ½ tsp of butter.
- Pour the milk mixture into the flour and gently whisk together - do not over-mix! There should be some small lumps of flour remaining, which makes the pancakes become light and fluffy.
- Spoon a ladle of batter into the pan and fry for a few minutes, until bubbles stop forming on the top. Flip the pancake and fry for another few minutes, until golden brown on both sides.
- Serve with your favourite toppings.
