Pancakes

Ingredients

  • 150g plain flour
  • 8g baking powder, or Paneangeli Lievito Vanigliato
  • 1 tbsp apple cider vinegar
  • 250ml oat milk
  • Vegan butter for frying

Directions

  1. Add the apple cider vinegar then oat milk to a jug and let sit for 2 minutess without stirring.
  2. Whisk together the flour and baking powder.
  3. Heat the pan to medium-high heat, then add about ½ tsp of butter.
  4. Pour the milk mixture into the flour and gently whisk together - do not over-mix! There should be some small lumps of flour remaining, which makes the pancakes become light and fluffy.
  5. Spoon a ladle of batter into the pan and fry for a few minutes, until bubbles stop forming on the top. Flip the pancake and fry for another few minutes, until golden brown on both sides.
  6. Serve with your favourite toppings.
