Creamy broccoli pasta

Ingredients

serves 2
  • 180g dry pasta
  • ½ broccoli, chopped
  • 150g frozen peas
  • 150ml soya milk
  • 2 tbsp olive oil
  • 1 tsp white miso paste
  • 2 tbsp nutritional yeast
  • Juice of ½ lemon
  • 1 small garlic clove
  • Black pepper, to taste

Directions

  1. Preheat the oven to 180°C. Prepare a baking tray. Roast the broccoli for 10 mins.
  2. Cook the pasta and peas.
  3. In a measuring jug, whisk together the soya milk, miso paste, olive oil, nutritional yeast, lemon juice, garlic and seasoning. Add more milk as needed.
  4. In a large pan, heat the sauce on a medium heat and stir frequently until slightly thickened.
  5. Combine everything in one pan and stir until heated through. Season to taste.
