Creamy mushroom pasta
Ingredients

- 180g dry pasta
- 1 tbsp vegetable oil
- 1 garlic clove, minced
- 200g mushrooms, sliced
- 150ml soya milk
- 2 tbsp olive oil
- 1 tsp white miso paste
- 2 tbsp nutritional yeast
- Juice of ½ lemon
- Black pepper, to taste
- 2 handfuls rocket leaves
Directions
- Cook the pasta.
- In a large pan, heat the vegetable oil and cook the garlic on a medium heat for 1 minute. Add the mushrooms and cook for 5-10 minutes.
- In a measuring jug, whisk together the soya milk, miso paste, olive oil, nutritional yeast and seasoning. Add more milk as needed.
- Pour the sauce into the pan of mushrooms to heat through. Stir frequently until slightly thickened. Stir in the lemon juice and simmer for a few more minutes.
- Add the pasta. Stir until combined and heated through. Season to taste.
- Serve topped with rocket.”
