Creamy mushroom pasta

Ingredients

serves 2
  • 180g dry pasta
  • 1 tbsp vegetable oil
  • 1 garlic clove, minced
  • 200g mushrooms, sliced
  • 150ml soya milk
  • 2 tbsp olive oil
  • 1 tsp white miso paste
  • 2 tbsp nutritional yeast
  • Juice of ½ lemon
  • Black pepper, to taste
  • 2 handfuls rocket leaves

Directions

  1. Cook the pasta.
  2. In a large pan, heat the vegetable oil and cook the garlic on a medium heat for 1 minute. Add the mushrooms and cook for 5-10 minutes.
  3. In a measuring jug, whisk together the soya milk, miso paste, olive oil, nutritional yeast and seasoning. Add more milk as needed.
  4. Pour the sauce into the pan of mushrooms to heat through. Stir frequently until slightly thickened. Stir in the lemon juice and simmer for a few more minutes.
  5. Add the pasta. Stir until combined and heated through. Season to taste.
  6. Serve topped with rocket.”
