Black bean burgers
Ingredients

- 1 400g can black beans, drained and rinsed
- 1 large garlic clove, crushed
- ½ red onion, chopped
- ½ tsp cumin
- 1 tsp smoked paprika
- ½ tsp turmeric
- ½ tsp chilli powder
- 1 tbsp olive oil
- 1 tsp reduced sodium soy sauce
- 1 tbsp apple cider vinegar
- 50g rolled oats
Directions
- Preheat the oven to 180°C. Place the black beans in a medium bowl and mash well with a fork.
- In a medium pan, heat some vegetable oil and sauté the onions for 3 minutes. Add the garlic and cook for another minute.
- Add the sautéd onion and garlic to the mashed beans, together with the spices, olive oil, soy sauce, apple cider vinegar and oats. Combine well, adding a splash of water if needed. Shape into 4 patties. Bake for 30 minutes, until the outside is crispy.
