Black bean ragu

Ingredients
serves 2-3
- 1 tbsp olive oil
- ½ onion, finely chopped
- 1 garlic clove, minced
- 1 tsp smoked paprika
- 1 tsp ground cumin
- ¼ tsp sea salt, to taste
- 1 400g can chopped tomatoes
- 1 400g can black beans, drained and rinsed
- 2 tsp miso paste
- Ground black pepper, to taste
Directions
1 .In a large pan, heat the olive oil on a medium-high heat. Add the onion and cook for 5 minutes until softened. Add the garlic and cook for another minute.
- Stir the paprika, cumin and salt. Add the black beans, chopped tomatoes, and half a can of water.
- Bring to a simmer for 15-20 minutes, stirring occasionally, until darkened and reduced.
- Stir through the miso paste and ground black pepper.
