Black bean ragu

Ingredients

serves 2-3
  • 1 tbsp olive oil
  • ½ onion, finely chopped
  • 1 garlic clove, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ¼ tsp sea salt, to taste
  • 1 400g can chopped tomatoes
  • 1 400g can black beans, drained and rinsed
  • 2 tsp miso paste
  • Ground black pepper, to taste

Directions

1 .In a large pan, heat the olive oil on a medium-high heat. Add the onion and cook for 5 minutes until softened. Add the garlic and cook for another minute.

  1. Stir the paprika, cumin and salt. Add the black beans, chopped tomatoes, and half a can of water.
  2. Bring to a simmer for 15-20 minutes, stirring occasionally, until darkened and reduced.
  3. Stir through the miso paste and ground black pepper.
