Butter beans with green pesto
Ingredients
serves 2-3
- 1 400g can of butter beans, drained and rinsed
- 2 garlic cloves
- 70g pine nuts
- Juice of 1 lemon
- 25g basil
- 3 tbsp olive oil
- 100g frozen peas
- 3 large handfuls of spinach
- ¼ tsp sea salt
Directions
- In a food processor, add the garlic, pine nuts, lemon juice, basil, olive oil, salt and a few tbsp of water and blend until a chunky pesto forms.
- In a pan, warm a drizzle of olive oil on medium heat. Add the butter beans and cook for 5 minutes until they crisp up around the edges.
- Add the pesto, peas and spinach and cook for 5-10 minutes until everything has warmed through and the spinach has wilted. Serving with salads, on toast or with pasta.
