Butter beans with green pesto

Ingredients

serves 2-3
  • 1 400g can of butter beans, drained and rinsed
  • 2 garlic cloves
  • 70g pine nuts
  • Juice of 1 lemon
  • 25g basil
  • 3 tbsp olive oil
  • 100g frozen peas
  • 3 large handfuls of spinach
  • ¼ tsp sea salt

Directions

  1. In a food processor, add the garlic, pine nuts, lemon juice, basil, olive oil, salt and a few tbsp of water and blend until a chunky pesto forms.
  2. In a pan, warm a drizzle of olive oil on medium heat. Add the butter beans and cook for 5 minutes until they crisp up around the edges.
  3. Add the pesto, peas and spinach and cook for 5-10 minutes until everything has warmed through and the spinach has wilted. Serving with salads, on toast or with pasta.
