Chickpea tacos
Ingredients

- 1 small red onion, sliced
- 1 garlic clove, crushed
- 1 bell pepper, chopped
- 1 tbsp vegetable oil
- 1 400g can chickpeas, drained and rinsed
- 2 tomatoes, chopped
- 1 tsp turmeric
- 1 tsp smoked paprika
- ½ tsp chilli powder
- ½ tsp cumin
- Juice of ½ a lime
- Handful fresh coriander, chopped
- 4 tsp ijvar or salsa (optional)
- 1 medium avocado, sliced
- 4 taco wraps, warmed
Directions
- In a large frying pan, heat the oil. Add the onion and cook for a few minutes, followed by the garlic and red pepper. Cook for a few minutes until the onion starts to soften.
- Add the chickpeas, tomatoes, spices and lime juice, and continue to cook on a medium heat for 5-10 minutes. Add a few tbps water if it becomes too dry.
- Stir in the fresh coriander.
- Assemble the tacos in the wraps, spreading a tsp of ijvar or salsa first. Top with avocado slices.
