Chimichurri chickpea burgers

Ingredients

serves 2
  • 1 400g can chickpeas, drained and rinsed
  • 2 garlic cloves
  • Large handful fresh coriander
    • 2 tsp chimichurri seasoning
  • ½ tsp ground coriander
  • 1 tsp cumin
  • ½ tsp sea salt
  • Juice of ½ lemon
  • 1 tbsp extra virgin olive oil
  • 40g oats

Directions

  1. Preheat the oven to 180°C. Prepare a baking tray.
  2. Add all ingredients to a food processor and blend until a coarse mixture forms. Scrape down the side, add 1-2 tbsp water and pulse again.
  3. Divide the mixture in 2 and place on the tray. Shape into 2 large burgers and smooth out using the back of a spoon.
  4. Bake for 35-40 minutes, flipping the burgers halfway.
  5. Optionally serve in a bun with tomato, lettuce and tahini sauce (see recipe).
