Chimichurri chickpea burgers

Ingredients

- 1 400g can chickpeas, drained and rinsed
- 2 garlic cloves
- Large handful fresh coriander

- 2 tsp chimichurri seasoning
- ½ tsp ground coriander
- 1 tsp cumin
- ½ tsp sea salt
- Juice of ½ lemon
- 1 tbsp extra virgin olive oil
- 40g oats
Directions
- Preheat the oven to 180°C. Prepare a baking tray.
- Add all ingredients to a food processor and blend until a coarse mixture forms. Scrape down the side, add 1-2 tbsp water and pulse again.
- Divide the mixture in 2 and place on the tray. Shape into 2 large burgers and smooth out using the back of a spoon.
- Bake for 35-40 minutes, flipping the burgers halfway.
- Optionally serve in a bun with tomato, lettuce and tahini sauce (see recipe).
