Curried cauliflower

Ingredients

- 1 small cauliflower, cut into quarters
- 2 tbsp olive oil
- 1 tbsp tomato paste
- 1 tsp cumin
- 1½ tsp garam masala
- 1 tsp smoked paprika
- ½ tsp ground coriander
- ½ tsp garlic powder
- ½ tsp sea salt, to taste
- 125g unsweetened plant-based yoghurt
- Juice of 1 small lemon
- 2 tbsp toasted flakes almonds
Directions
- In a large pan, heat 1 tbsp olive oil. Fry the cauliflower on each side until browned. Add 150ml water and cover with a lid. Cook over medium heat for 10-15 minutes.
- To make the sauce, combine the remaining tbsp of olive oil, tomato paste, spices, yoghurt and lemon juice. Mix until creamy, then warm through in a small pan over a medium-low heat for 5-10 minutes, stirring occasionally. Serve the cauliflower on a bed of sauce and topped with a drizzle more of the sauce and toasted flaked almonds.
