Curried cauliflower

Ingredients

  • 1 small cauliflower, cut into quarters
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tsp cumin
  • 1½ tsp garam masala
  • 1 tsp smoked paprika
  • ½ tsp ground coriander
  • ½ tsp garlic powder
  • ½ tsp sea salt, to taste
  • 125g unsweetened plant-based yoghurt
  • Juice of 1 small lemon
  • 2 tbsp toasted flakes almonds

Directions

  1. In a large pan, heat 1 tbsp olive oil. Fry the cauliflower on each side until browned. Add 150ml water and cover with a lid. Cook over medium heat for 10-15 minutes.
  2. To make the sauce, combine the remaining tbsp of olive oil, tomato paste, spices, yoghurt and lemon juice. Mix until creamy, then warm through in a small pan over a medium-low heat for 5-10 minutes, stirring occasionally. Serve the cauliflower on a bed of sauce and topped with a drizzle more of the sauce and toasted flaked almonds.
