Curried chickpea burgers
Ingredients
serves 2-3
- 1 400g can chickpeas, drained and rinsed
- 2 tbsp cornflour
- 1 small onion, finely chopped
- ½ red pepper, finely chopped
- 15g fresh coriander, chopped
- ½ tsp salt
- ½ tsp garlic powder
- 1 tbsp curry powder
- 70ml water
- ½ tbsp olive oil
Directions
- Preheat the oven to 180°C. Line a baking tray with parchment paper.
- Mash the chickpeas in a large bowl with a fork.
- Add the breadcrumbs, cornstarch, onion, bell pepper, coriander, salt, garlic powder, and curry powder to the mashed chickpeas. Stir to combine. Add the water and mix until a dough comes together.
- Divide and shape into 6 small burgers. Brush with olive oil on both sides. Bake for 25-30 minutes, flipping halfway.
