Curried chickpea burgers

Ingredients

serves 2-3
  • 1 400g can chickpeas, drained and rinsed
  • 2 tbsp cornflour
  • 1 small onion, finely chopped
  • ½ red pepper, finely chopped
  • 15g fresh coriander, chopped
  • ½ tsp salt
  • ½ tsp garlic powder
  • 1 tbsp curry powder
  • 70ml water
  • ½ tbsp olive oil

Directions

  1. Preheat the oven to 180°C. Line a baking tray with parchment paper.
  2. Mash the chickpeas in a large bowl with a fork.
  3. Add the breadcrumbs, cornstarch, onion, bell pepper, coriander, salt, garlic powder, and curry powder to the mashed chickpeas. Stir to combine. Add the water and mix until a dough comes together.
  4. Divide and shape into 6 small burgers. Brush with olive oil on both sides. Bake for 25-30 minutes, flipping halfway.
