Pasta with tomato, courgette and artichoke

Ingredients

  • 180g pasta
  • ½ red onion, chopped
  • 1 garlic clove, minced
  • 1 large courgette, chopped
  • 60g artichoke hearts, cooked and chopped
  • 1 tbsp tomato paste
  • 1 400g can chopped tomatoes
  • A few fresh basil leaves
  • Sea salt, to taste
  • Ground black pepper, to taste

Directions

  1. In a large pan, heat the oil. Add the onion and cook for a few minutes, followed by the garlic and courgette. Cook for a few minutes until the onion starts to soften.
  2. Meanwhile, cook the pasta.
  3. Add the tomato paste and chopped tomatoes and continue to cook on a medium heat for 5 minutes. Add the artichoke and cook for another 5 minutes, until heated through and the sauce has thickened. Tear the basil leaves and stir in. Season to taste.
  4. Drain the pasta. Add to the sauce and toss together until coated and heated through. Serve with a grind of black pepper.
