Pasta with tomato, courgette and artichoke
Ingredients

- 180g pasta
- ½ red onion, chopped
- 1 garlic clove, minced
- 1 large courgette, chopped
- 60g artichoke hearts, cooked and chopped
- 1 tbsp tomato paste
- 1 400g can chopped tomatoes
- A few fresh basil leaves
- Sea salt, to taste
- Ground black pepper, to taste
Directions
- In a large pan, heat the oil. Add the onion and cook for a few minutes, followed by the garlic and courgette. Cook for a few minutes until the onion starts to soften.
- Meanwhile, cook the pasta.
- Add the tomato paste and chopped tomatoes and continue to cook on a medium heat for 5 minutes. Add the artichoke and cook for another 5 minutes, until heated through and the sauce has thickened. Tear the basil leaves and stir in. Season to taste.
- Drain the pasta. Add to the sauce and toss together until coated and heated through. Serve with a grind of black pepper.
