Pea and butter bean mash

Ingredients

serves 3
  • 1 400g can butter beans, drained and rinsed
  • 150g frozen peas
  • Juice and zest of ½ a lemon
  • 2 tbsp olive oil
  • Large handful fresh parsley, chopped
  • ½ tsp sea salt, to taste

Directions

  1. Defrost the peas in a pan with water, simmering for 1 minute.
  2. In a food processor, add all the ingredients and blend until almost smooth. Season to taste.
  3. Gently heat the mash in a pan on a medium-low heat for 5-10 minutes, then serve.
