Pea and butter bean mash
Ingredients
serves 3
- 1 400g can butter beans, drained and rinsed
- 150g frozen peas
- Juice and zest of ½ a lemon
- 2 tbsp olive oil
- Large handful fresh parsley, chopped
- ½ tsp sea salt, to taste
Directions
- Defrost the peas in a pan with water, simmering for 1 minute.
- In a food processor, add all the ingredients and blend until almost smooth. Season to taste.
- Gently heat the mash in a pan on a medium-low heat for 5-10 minutes, then serve.
