Roasted cauliflower and hummus pittas
Ingredients

- 1 small cauliflower, chopped
- 1 tbsp olive oil
- ½ tsp turmeric
- ½ tsp cumin
- ¼ tsp chilli powder
- Pinch sea salt
- 2 wholemeal pittas
- 4 tbsp hummus
- 2 large handfuls rocket
- 2 tsp pomegranate seeds (optional)
Directions
- Preheat the oven to 190°C. Place the cauliflower on a lined baking tray. Drizzle with the olive oil and spices, and toss well until evenly coated. Roast for 20 minutes.
- Toast the pittas and slice open. Spread 1 tbsp of hummus in each pitta. Add the rocket then cauliflower. Top with pomegranate seeds and serve.
