Roasted cauliflower and hummus pittas

Ingredients

  • 1 small cauliflower, chopped
  • 1 tbsp olive oil
  • ½ tsp turmeric
  • ½ tsp cumin
  • ¼ tsp chilli powder
  • Pinch sea salt
  • 2 wholemeal pittas
  • 4 tbsp hummus
  • 2 large handfuls rocket
  • 2 tsp pomegranate seeds (optional)

Directions

  1. Preheat the oven to 190°C. Place the cauliflower on a lined baking tray. Drizzle with the olive oil and spices, and toss well until evenly coated. Roast for 20 minutes.
  2. Toast the pittas and slice open. Spread 1 tbsp of hummus in each pitta. Add the rocket then cauliflower. Top with pomegranate seeds and serve.
