Harissa qunioa and roasted vegetable salad
Ingredients

- 80g quinoa
- 1 400g can black beans
- 2 bell peppers, chopped
- ½ broccoli, chopped
- ½ tsp turmeric
- 1 tsp smoked paprika
- ¼ tsp fine sea salt
- 2 tsp harissa paste
- 1 tbsp extra-virgin olive oil
Directions
- Cook the quinoa for 15-20 minutes, until softened with a slight crunch.
- Meanwhile, preheat the oven to 180°C. Roast the peppers and broccoli for 10-15 mins.
- In a large bowl, add the quinoa, turmeric, paprika, salt, harissa paste and olive oil, and mix well.
- Stir in the black beans and roasted vegetables. Serve warm or cold.
