Rocket and tomato couscous salad

Ingredients

serves 2-3
  • 100g couscous
  • ½ tsp turmeric
  • ¼ tsp garlic powder
  • ¼ tsp sea salt, to taste
  • Ground black pepper, to taste
  • 2 tbsp sundried tomato paste
  • 2 large tomatoes, chopped
  • ¼ large cucumber, chopped
  • 8 olives, chopped
  • 1 tbsp olive oil
  • 2 large handfuls rocket

Directions

  1. In a large bowl, add the couscous and boiled water, pouring until the water is 0.5cm above the couscous. Set aside for 10 mins.
  2. Using a fork, loosen the couscous. Add the garlic, turmeric, salt and pepper then mix well.
  3. Mix in the tomatoes, cucumber and olives. Add the rocket and olive oil, then gently mix. Serve cold.
