Rocket and tomato couscous salad
Ingredients
serves 2-3
- 100g couscous
- ½ tsp turmeric
- ¼ tsp garlic powder
- ¼ tsp sea salt, to taste
- Ground black pepper, to taste
- 2 tbsp sundried tomato paste
- 2 large tomatoes, chopped
- ¼ large cucumber, chopped
- 8 olives, chopped
- 1 tbsp olive oil
- 2 large handfuls rocket
Directions
- In a large bowl, add the couscous and boiled water, pouring until the water is 0.5cm above the couscous. Set aside for 10 mins.
- Using a fork, loosen the couscous. Add the garlic, turmeric, salt and pepper then mix well.
- Mix in the tomatoes, cucumber and olives. Add the rocket and olive oil, then gently mix. Serve cold.
