Smoky beans
Ingredients

- 1 tbsp vegetable oil
- ½ onion finely diced
- 1 garlic clove, minced
- 1 tbsp tomato paste
- 1 tsp smoked paprika
- ¼ tsp chilli powder
- ¼ tsp sea salt
- 1 tbsp brown sugar
- 1 tbsp reduced sodium soy sauce
- 1 tsp dijon mustard
- 1 tbsp apple cider vinegar
- 400g can cannellini beans, drained and rinsed
- 100g passata
Directions

Heat the oil in a saucepan, and add the onion and garlic. Cook over a medium heat for 5 minutes until soft and translucent.

Add the tomato paste, smoked paprika, chilli, brown sugar, soy sauce and apple cider vinegar, and cook for a couple more minutes.

Add the beans and passata, and simmer for 5-10 minutes, until the mixture is piping hot and the sauce has thickened a little.
