Smoky beans

Ingredients

  • 1 tbsp vegetable oil
  • ½ onion finely diced
  • 1 garlic clove, minced
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • ¼ tsp chilli powder
  • ¼ tsp sea salt
  • 1 tbsp brown sugar
  • 1 tbsp reduced sodium soy sauce
  • 1 tsp dijon mustard
  • 1 tbsp apple cider vinegar
  • 400g can cannellini beans, drained and rinsed
  • 100g passata

Directions

  1. Heat the oil in a saucepan, and add the onion and garlic. Cook over a medium heat for 5 minutes until soft and translucent.

  2. Add the tomato paste, smoked paprika, chilli, brown sugar, soy sauce and apple cider vinegar, and cook for a couple more minutes.

  3. Add the beans and passata, and simmer for 5-10 minutes, until the mixture is piping hot and the sauce has thickened a little.
