Smoky cauliflower steak
Ingredients

- 1 cauliflower, leaves removed
- 1 tbsp brown miso paste
- 1 tsp smoked paprika
- 1 tbsp balsamic vinegar
- 1 tbsp soy sauce
- 1 tbsp maple syrup
- 3 tbsp olive oil
- 1 tsp chilli powder
- 1 tbsp pumpkin seeds
- 1 handful of coriander, chopped
Directions
- Preheat the oven to 180°C. Slice the middle of the cauliflower into 2 steaks about 2cm.
- In a small bowl, mix 2 tbsp of the olive oil with the paprika, miso paste, vinegar, soy sauce and maple syrup. Brush half the mixture over both sides of the cauliflower steaks. Place the steaks on a prepared baking tray and bake for 15 minutes. Turn over and bake for another 15-20 minutes until softened.
- Add the pumpkin seeds, chilli powder and coriander to the remaining sauce and mix.
- Heat the remaining tbsp of olive oil in a small pan. Add the sauce and cook for 2 minutes on a medium heat.
- Serve the cauliflower steaks topped with the sauce a garnish of coriander.
