Soya mince lasagne

Ingredients

serves 4
  • 100g soya mince
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 2 carrots, chopped
  • 1 bell pepper, chopped
  • 1 large courgette, chopped
  • 1 400g can chopped tomatoes
  • 1 tbsp tomato paste
  • 500ml vegetable stock
  • 1 tsp dried oregano
  • Black pepper, to taste
  • Beschamel sauce (see recipe)
  • Lasagne sheets

Directions

  1. In a small bowl, add the soya mince and enough vegetable stock to just cover it. Leave to sit for 5-10 minutes.
  2. In a large pan, heat the oil. Add the onion and cook for 3 minutes until slightly softened. Add the garlic and cook for 1 more minute. Add the carrot and soya mince and cook for a few more minutes.
  3. Add the pepper and courgette. Stir in the tomatoes, tomato paste, oregano, seasoning and vegetable stock as needed. Simmer for 15 mins until slightly thickened, stirring frequently.
  4. Preheat the oven to 180°C. Make the bechamel sauce.
  5. Assemble the lasagne in a dish in 2 layers, starting with a layer of ragu, then lasagne sheets. Pour have the bechamel sauce over the lasagne sheets and spread to cover completely. Repeat for the next layer. Sprinkle with nutritional yeast and place in the oven to cook for 30 minutes, until bubbling and golden on top.
