Soya mince ragu

Ingredients

serves 4
  • 100g soya mince
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 2 carrots, chopped
  • 1 400g can chopped tomatoes
  • 1 tbsp tomato paste
  • 500ml vegetable stock
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • ½ tsp sea salt, to taste
  • Black pepper, to taste

Directions

  1. In a small bowl, add the soya mince and enough vegetable stock to just cover it. Leave to sit for 5-10 minutes.
  2. In a large pan, heat the oil. Add the onion and cook for 3 minutes until slightly softened. Add the garlic and cook for 1 more minute. Add the carrot and soya mince and cook for a few more minutes.
  3. Stir in the tomatoes, tomato paste, herbs, seasoning and vegetable stock as needed. Simmer for 20 mins until slightly thickened, stirring frequently.
  4. Serve with pasta or crusty bread.
