Soya mince ragu
Ingredients
serves 4
- 100g soya mince
- 1 tbsp vegetable oil
- 1 onion, chopped
- 1 garlic clove, crushed
- 2 carrots, chopped
- 1 400g can chopped tomatoes
- 1 tbsp tomato paste
- 500ml vegetable stock
- 1 tsp dried oregano
- ½ tsp dried thyme
- ½ tsp dried rosemary
- ½ tsp sea salt, to taste
- Black pepper, to taste
Directions
- In a small bowl, add the soya mince and enough vegetable stock to just cover it. Leave to sit for 5-10 minutes.
- In a large pan, heat the oil. Add the onion and cook for 3 minutes until slightly softened. Add the garlic and cook for 1 more minute. Add the carrot and soya mince and cook for a few more minutes.
- Stir in the tomatoes, tomato paste, herbs, seasoning and vegetable stock as needed. Simmer for 20 mins until slightly thickened, stirring frequently.
- Serve with pasta or crusty bread.
