Asian salad
Ingredients

- 2 tbsp sesame oil
- 300g beansprouts
- 2 large carrots, grated
- ½ cucumber, chopped
- 100g edamame, cooked
- 4 tbsp reduced sodium soy sauce
- Juice of ½ lime
- ¼ tsp garlic granules or 1 garlic clove, minced
- 1 tsp ground ginger
- ½ tsp chilli powder
- Handful of fresh coriander, chopped
- 1 tbsp sesame seeds
Directions
- Heat 1 tbsp sesame oil in a medium pan. Cook the beansprouts on medium heat for 5-10 minutes.
- To make the dressing, mix the sesame oil, soy sauce, lime juice, ginger, garlic, chilli and coriander.
- In a large bowl, mix the beansprouts, carrot, cucumber and edamame. Pour over the dressing and mix well. Top with sesame seeds.
