Asian salad

Ingredients

  • 2 tbsp sesame oil
  • 300g beansprouts
  • 2 large carrots, grated
  • ½ cucumber, chopped
  • 100g edamame, cooked
  • 4 tbsp reduced sodium soy sauce
  • Juice of ½ lime
  • ¼ tsp garlic granules or 1 garlic clove, minced
  • 1 tsp ground ginger
  • ½ tsp chilli powder
  • Handful of fresh coriander, chopped
  • 1 tbsp sesame seeds

Directions

  1. Heat 1 tbsp sesame oil in a medium pan. Cook the beansprouts on medium heat for 5-10 minutes.
  2. To make the dressing, mix the sesame oil, soy sauce, lime juice, ginger, garlic, chilli and coriander.
  3. In a large bowl, mix the beansprouts, carrot, cucumber and edamame. Pour over the dressing and mix well. Top with sesame seeds.
