Bean salad
Ingredients
serves 2-3
- 1 400g can mixed beans, drained and rinsed
- 160g sweetcorn
- ⅓ cucumber, chopped
- 2 large tomatoes, chopped
- 60g artichoke, chopped
- ½ tsp oregano
- ¼ tsp garlic powder
- 1 tbsp balsamic vinegar
- 2 tbsp olive oil
Directions
- Add all the vegetables to a large bowl and gently toss together.
- Add the oregano, garlic, balsamic vinegar and olive oil, then toss until coated.
