Bean salad

Ingredients

serves 2-3
  • 1 400g can mixed beans, drained and rinsed
  • 160g sweetcorn
  • ⅓ cucumber, chopped
  • 2 large tomatoes, chopped
  • 60g artichoke, chopped
  • ½ tsp oregano
  • ¼ tsp garlic powder
  • 1 tbsp balsamic vinegar
  • 2 tbsp olive oil

Directions

  1. Add all the vegetables to a large bowl and gently toss together.
  2. Add the oregano, garlic, balsamic vinegar and olive oil, then toss until coated.
