Edamame salad

Ingredients

serves 2
  • 150g edamame, cooked
  • ½ cucumber, diced
  • 1 red bell pepper, diced
  • Large handful coriander, chopped
  • 2 tsp sesame seeds
  • Juice of ½ a lime
  • 1 tbsp sesame oil
  • 1 tbsp reduced sodium soy sauce
  • 1 tsp honey
  • ¼ tsp ground ginger

Directions

  1. In a large bowl, combine the edamame, cucumber, pepper, coriander and sesame seeds.
  2. In a small measuring jug, whisk together the remaining ingredients.
  3. Pour the dressing over the salad and toss together. Serve cold.
