Edamame salad
Ingredients
serves 2
- 150g edamame, cooked
- ½ cucumber, diced
- 1 red bell pepper, diced
- Large handful coriander, chopped
- 2 tsp sesame seeds
- Juice of ½ a lime
- 1 tbsp sesame oil
- 1 tbsp reduced sodium soy sauce
- 1 tsp honey
- ¼ tsp ground ginger
Directions
- In a large bowl, combine the edamame, cucumber, pepper, coriander and sesame seeds.
- In a small measuring jug, whisk together the remaining ingredients.
- Pour the dressing over the salad and toss together. Serve cold.
