Italian salad
Ingredients
serves 3-4
- 1 romaine lettuce, chopped
- 2 large tomatoes, chopped
- ½ cucmber, chopped
- 1 large carrot, grated
- 160g sweetcorn
- 12 olives, chopped
- 1 400g can cannellini beans, drained and rinsed
- ½ tsp dried oregano
- ½ tsp sea salt
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
Directions
- In a large bowl combine all the veggies and beans.
- Sprinkle over the herbs and salt, then add the balsamic vinegar and olive oil.
- Gently toss together until evenly coated.
