Italian salad

Ingredients

serves 3-4
  • 1 romaine lettuce, chopped
  • 2 large tomatoes, chopped
  • ½ cucmber, chopped
  • 1 large carrot, grated
  • 160g sweetcorn
  • 12 olives, chopped
  • 1 400g can cannellini beans, drained and rinsed
  • ½ tsp dried oregano
  • ½ tsp sea salt
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar

Directions

  1. In a large bowl combine all the veggies and beans.
  2. Sprinkle over the herbs and salt, then add the balsamic vinegar and olive oil.
  3. Gently toss together until evenly coated.
