Simple black bean salad

Ingredients
serves 2-3
- 1 400g black beans, drained and rinsed
- 1 bell pepper, chopped
- 2 large tomatoes, chopped
- ¼ cucumber, chopped
- 1 avocado, chopped
- 75g sweetcorn (optional)
- Handful coriander chopped
- Juice of ½ lemon
- 2 tbsp extra virgin olive oil
- ¼ tsp sea salt
- ¼ tsp garlic powder
- ½ tsp cumin
- ¼ tsp chilli powder
Directions
- Combine all the vegetables and coriander in medium bowl.
- To make the dressing, whisk together the remaining ingredients. Pour over the salad and mix again.
