Simple black bean salad

Ingredients

serves 2-3
  • 1 400g black beans, drained and rinsed
  • 1 bell pepper, chopped
  • 2 large tomatoes, chopped
  • ¼ cucumber, chopped
  • 1 avocado, chopped
  • 75g sweetcorn (optional)
  • Handful coriander chopped
  • Juice of ½ lemon
  • 2 tbsp extra virgin olive oil
  • ¼ tsp sea salt
  • ¼ tsp garlic powder
  • ½ tsp cumin
  • ¼ tsp chilli powder

Directions

  1. Combine all the vegetables and coriander in medium bowl.
  2. To make the dressing, whisk together the remaining ingredients. Pour over the salad and mix again.
