Spiced chickpea salad

Ingredients

serves 2
  • 1 lettuce heart, chopped
  • 2 large tomatoes, chopped
  • 4 sun-dried tomatoes, chopped
  • ¼ cucumber, chopper
  • 1 400g can chickpeas, drained and rinsed
  • ¼ tsp garlic powder
  • ½ tsp turmeric
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • Black pepper, to taste
  • For the dressing:
  • Pinch sea salt
  • 1 tbsp Balsamic vinegar
  • 1 tbsp olive oil

Directions

  1. Heat a medium pan and add the chickpeas. Cook on a medium-high heat for a few minutes. Mix in the spices and cook for another 5-10 minutes, until slightly crispy.
  2. Meanwhile, in a large bowl, add the lettuce, tomatoes and cucumber and toss together. Sprinkle over the salt, balsamic vinegar and olive oil for the dressing, then toss until mixed well. Add the chickpeas and gently toss together.
