Sweet potato avocado salad

Ingredients

  • 2 sweet potatoes, chopped into small chunks
  • 1 red pepper, chopped
  • 1 large avocado, chopped
  • 1 400g can chickpeas, drained and rinsed
  • 1 tsp smoked paprika
  • Handful of fresh coriander, finely chopped
  • 2 tbsp extra virgin olive oil
  • Juice of ½ a lime
  • ½ tsp chilli powder
  • ½ tsp garlic powder

Directions

  1. Preheat the oven to 180°C. Prepare a baking tray of sweet potatoes, spray with vegetable oil and sprinkle over the smoked paprika. Roast for 20 mins until soft. Roast the red pepper for 10-15 mins.

  2. Meanwhile, to make the dressing, combine the olive oil, lime juice, chilli and garlic and mix well.

  3. In a large bowl, add the roasted sweet potato, red pepper, chickpeas, coriander and dressing. Mix with salad tongs, being careful not to squash the sweet potato. Add the chunks of avocado and mix again. Serve warm or cold.
