Tofu sesame salad bowl

Ingredients

  • 225g extra firm tofu, cubed
  • 1 tbsp sesame oil
  • 2 tbsp soy sauce
  • 2 large carrots, grated
  • 100g sugar snap peas
  • ½ medium cucumber, chopped
  • 100g edamame, cooked
  • 2 tbsp sesame oil
  • 1 tbsp soy sauce
  • Juice of 1 lime
  • ½ tsp ginger
  • Sesame seeds

Directions

  1. In a large pan, heat 1 tbsp sesame oil. Fry the tofu on a medium-high heat for a few minutes. Add 2 tbsp soy sauce and continue to cook, turning occasionally to brown each side.
  2. Make the dressing by mixing together the remaining sesame oil, soy sauce, lime and ginger.
  3. Assemble the salads, drizzle with the dressing, and sprinkle with sesame seeds.
