Tofu sesame salad bowl
Ingredients

- 225g extra firm tofu, cubed
- 1 tbsp sesame oil
- 2 tbsp soy sauce
- 2 large carrots, grated
- 100g sugar snap peas
- ½ medium cucumber, chopped
- 100g edamame, cooked
- 2 tbsp sesame oil
- 1 tbsp soy sauce
- Juice of 1 lime
- ½ tsp ginger
- Sesame seeds
Directions
- In a large pan, heat 1 tbsp sesame oil. Fry the tofu on a medium-high heat for a few minutes. Add 2 tbsp soy sauce and continue to cook, turning occasionally to brown each side.
- Make the dressing by mixing together the remaining sesame oil, soy sauce, lime and ginger.
- Assemble the salads, drizzle with the dressing, and sprinkle with sesame seeds.
