Avocado salsa verde

Ingredients

serves 4
  • 4 medium tomatillos, peeled and rinsed
  • ½ tbsp olive oil
  • ½ red onion
  • 1 garlic clove
  • 1 tsp chilli powder (or 1 jalapeño)
  • 15 sprigs cilantro, rinsed
  • 1 avocado
  • Sea salt, to taste

Directions

  1. Preheat the oven to 180°C. Prepare a baking tray with baking paper.
  2. Cut the stems out of the tomatillos. Place on the baking tray and brush with olive oil. Roast for 20 minutes or until they start to soften and turn army green in colour.  
  3. Roughly slice the onion and place in a bowl of cold water for 5 minutes.
  4. In a food processor, add the onion, garlic, tomatillos, chilli, salt and coriander. Blend until almost smooth.
  5. Add the avocado. Blend until well combined. Season to taste.
  6. Chill for 20 minutes before serving with tortillas, tacos, fajitas and more.
