Tomato bruschetta

Ingredients

serves 4
  • ½ large baguette
  • 200g cherry tomatoes
  • 1 garlic clove
  • Handful fresh basil leaves
  • ½ tsp dried oregano
  • Extra-virgin olive oil, to taste

Directions

  1. Slice the baguette into 1cm thick slices. Add to large pan on a medium heat, and cook until lightly toasted. Turn over and toast the other side.
  2. Chop the tomatoes into small chunks. Chop the garlic clove in half.
  3. Rub the inside of the garlic onto each slice of toasted bread for a few seconds. Top each slice with tomatoes and herbs. Drizzle with olive oil and serve.
