Tomato bruschetta
Ingredients
serves 4
- ½ large baguette
- 200g cherry tomatoes
- 1 garlic clove
- Handful fresh basil leaves
- ½ tsp dried oregano
- Extra-virgin olive oil, to taste
Directions
- Slice the baguette into 1cm thick slices. Add to large pan on a medium heat, and cook until lightly toasted. Turn over and toast the other side.
- Chop the tomatoes into small chunks. Chop the garlic clove in half.
- Rub the inside of the garlic onto each slice of toasted bread for a few seconds. Top each slice with tomatoes and herbs. Drizzle with olive oil and serve.
