Tomato and tomatillo salsa

Ingredients

serves 4-6
  • 2 plum tomatoes
  • 5 medium tomatillos, peeled and rinsed
  • ½ tbsp olive oil
  • ½ red onion
  • 1 garlic clove
  • 1 tsp chilli powder (or 1 jalapeño)
  • 15 sprigs fresh coriander, rinsed
  • Sea salt, to taste
  • Squeeze of lime juice

Directions

  1. Preheat the oven to 180°C. Prepare a baking tray with baking paper.
  2. Cut the stems out of the tomatillos. Place the tomatoes and tomatillos on the baking tray and brush with olive oil. Roast for 20 minutes or until they start to soften and the tomatillos turn army green in color.  
  3. Roughly slice the onion and place in a bowl of cold water for 5 minutes.
  4. In a food processor, add the onion, garlic, tomatoes, tomatillos, chilli, salt lime and coriander.
  5. Blend until almost smooth. Season to taste.
  6. Serve warm or cold, with tortillas, tacos, fajitas and more.
