Tomato salsa
Ingredients
serves 6
- 6 plum tomatoes
- ½ tbsp olive oil
- ½ red onion
- 1 garlic clove
- 1 tsp chilli powder (or 1 jalapeño)
- 15 sprigs fresh coriander, rinsed
- Sea salt, to taste
Directions
- Preheat the oven to 180°C. Prepare a baking tray with baking paper.
- Place the tomatoes on the baking tray and brush with olive oil. Roast for 20 minutes or until they start to pop.
- Roughly slice the onion and place in a bowl of cold water for 5 minutes.
- In a food processor, add the onion, garlic, tomatoes, chilli, salt and coriander.
- Blend until almost smooth. Season to taste.
- Serve warm or cold, with tortillas, tacos, fajitas and more.
