Tomato salsa

Ingredients

serves 6
  • 6 plum tomatoes
  • ½ tbsp olive oil
  • ½ red onion
  • 1 garlic clove
  • 1 tsp chilli powder (or 1 jalapeño)
  • 15 sprigs fresh coriander, rinsed
  • Sea salt, to taste

Directions

  1. Preheat the oven to 180°C. Prepare a baking tray with baking paper.
  2. Place the tomatoes on the baking tray and brush with olive oil. Roast for 20 minutes or until they start to pop. 
  3. Roughly slice the onion and place in a bowl of cold water for 5 minutes.
  4. In a food processor, add the onion, garlic, tomatoes, chilli, salt and coriander.
  5. Blend until almost smooth. Season to taste.
  6. Serve warm or cold, with tortillas, tacos, fajitas and more.
