Apple and cranberry crumble

Ingredients

  • 60g caster sugar
  • ½ tsp ground cinnamon
  • 1 tsp vanilla extract
  • 6 apples, cut into chunks
  • 3 tbsp dried cranberries
  • Zest of 1 lemon
  • Juice of ½ lemon
  • 100g plain flour
  • 1 tbsp caster sugar
  • 50g vegan butter
  • ½ tsp ground cinnamon
  • 4 tbsp oats

Directions

  1. Heat a small pan, and add the caster sugar and heat for about 5 minutes until it caramelises. Add the cinnamon, vanilla and apples and cook for 1–2 minutes. Stir in the cranberries, lemon zest and juice. Remove from the heat and set aside.
  2. To make the topping, place the flour, sugar, butter and cinnamon in a bowl and rub together with your fingertips until the mixture resembles breadcrumbs. Transfer the fruit to a baking dish. Scatter the crumble topping over the fruit.
  3. Preheat the oven to 200°C. Bake for 20 minutes, or until the topping is a deep golden colour. Remove and serve warm.
