Apple and cranberry crumble
Ingredients

- 60g caster sugar
- ½ tsp ground cinnamon
- 1 tsp vanilla extract
- 6 apples, cut into chunks
- 3 tbsp dried cranberries
- Zest of 1 lemon
- Juice of ½ lemon
- 100g plain flour
- 1 tbsp caster sugar
- 50g vegan butter
- ½ tsp ground cinnamon
- 4 tbsp oats
Directions
- Heat a small pan, and add the caster sugar and heat for about 5 minutes until it caramelises. Add the cinnamon, vanilla and apples and cook for 1–2 minutes. Stir in the cranberries, lemon zest and juice. Remove from the heat and set aside.
- To make the topping, place the flour, sugar, butter and cinnamon in a bowl and rub together with your fingertips until the mixture resembles breadcrumbs. Transfer the fruit to a baking dish. Scatter the crumble topping over the fruit.
- Preheat the oven to 200°C. Bake for 20 minutes, or until the topping is a deep golden colour. Remove and serve warm.
