Banana peanut butter muffins

Ingredients

  • 2 overripe bananas
  • 75ml vegetable oil
  • 55g soft brown sugar
  • 120ml non-dairy milk
  • 125g self-raising flour
  • 100g wholemeal flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • 6 tsp smooth peanut butter

Directions

  1. Heat oven to 180°C. Line a muffin tin with cases.
  2. In a large bowl, mash the bananas, then add the oil, milk and sugar and mix well.
  3. In a separate bowl, combine the flour, baking powder and cinnamon and nutmeg. Add the dry mixture to the wet ingredients and mix well. 
  4. Spoon into the muffin cases to fill each one halfway. Spoon ½ tsp peanut butter spread into the centre of each muffin. Cover with the remaining mixture. Bake for 20 minutes, until a skewer inserted into the centre comes out clean.
