Almond butter granola bars
Ingredients

- 4 tbsp chia seeds
- 150g oats
- 2 tbsp honey
- 50g coconut oil
- 90g almond butter
- Zest of 1 lemon (optional)
- 1 small overripe banana
- 1 tsp ground ginger (optional)
- Pinch sea salt
- 50g almonds or cashew nuts, chopped
- 50g dried blueberries or cherries
- 50g pumpkin seeds
Directions
- In a small bowl, add the chia seeds and 8 tbsps of water and set aside.
- Heat the oven to 180°C and line a 20cm square baking tin with baking paper.
- In a food processor, blitz the oats to form a rough flour.
- In a small pan, melt the coconut oil, almond butter and honey together over a low heat. Once melted, remove from the heat. Add the chia seed mix and lemon zest, then set aside.
- In a large bowl, mash the banana. Add the almond butter mixture, then all the remaining dry ingredients and mix well.
- Pour the mixture into the prepared tin and press down with a spoon. Bake for 25-30 minutes or until golden brown. Leave to cool for 20 minutes before slicing.
