Almond butter granola bars

Ingredients

makes 16
  • 4 tbsp chia seeds
  • 150g oats 
  • 2 tbsp honey 
  • 50g coconut oil 
  • 90g almond butter
  • Zest of 1 lemon (optional)
  • 1 small overripe banana
  • 1 tsp ground ginger (optional)
  • Pinch sea salt
  • 50g almonds or cashew nuts, chopped 
  • 50g dried blueberries or cherries
  • 50g pumpkin seeds 

Directions

  1. In a small bowl, add the chia seeds and 8 tbsps of water and set aside.
  2. Heat the oven to 180°C and line a 20cm square baking tin with baking paper. 
  3. In a food processor, blitz the oats to form a rough flour.
  4. In a small pan, melt the coconut oil, almond butter and honey together over a low heat. Once melted, remove from the heat. Add the chia seed mix and lemon zest, then set aside.
  5. In a large bowl, mash the banana. Add the almond butter mixture, then all the remaining dry ingredients and mix well.
  6. Pour the mixture into the prepared tin and press down with a spoon. Bake for 25-30 minutes or until golden brown. Leave to cool for 20 minutes before slicing.
