Candied orange peel

Ingredients

serves 1 cake decoration
  • 1 orange
  • 100g caster sugar

Directions

  1. Peel the orange in strips and cut into desired shape. Remove as much white pith as possible.
  2. Blanch the strips by covering them in cold water then bring to boil. Drain and rinse.
  3. In a small pan, whisk together the sugar and 100ml water. Place the peels in the mixture. Bring it to a boil and then simmer until the peels become translucent.
  4. Roll in white sugar if desired. Allow to dry out for a few hours or overnight before decorating.
