Chocolate banana muffins

Ingredients

  • 180g self-raising flour
  • 35g unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp bicarbonate soda
  • 1 overripe medium banana, mashed
  • 1 tsp pure vanilla extract
  • 1 tbsp white or cider vinegar
  • 65ml oil
  • 50g caster sugar
  • 2 tbsp maple syrup or honey
  • 200ml soya milk

Directions

  1. Preheat the oven to 180°C. Line a loaf tin.
  2. In a medium bowl, add the flour, cocoa powder, baking powder and bicaronate of soda. Mix and set aside.
  3. In a large bowl, mash the bananas. Add the oil, sugar, maple syrup/honey, vanilla, apple cider vinegar, and milk then whisk together.
  4. Add the dry ingredients into the wet and whisk until just combined. Add a little more milk if needed. Pour evenly into the loaf tin and bake for 35 minutes, until a skewer inserted in the centre comes out clean. Leave to cool before serving.
