Chocolate banana muffins
Ingredients

- 180g self-raising flour
- 35g unsweetened cocoa powder
- 1 tsp baking powder
- ½ tsp bicarbonate soda
- 1 overripe medium banana, mashed
- 1 tsp pure vanilla extract
- 1 tbsp white or cider vinegar
- 65ml oil
- 50g caster sugar
- 2 tbsp maple syrup or honey
- 200ml soya milk
Directions
- Preheat the oven to 180°C. Line a loaf tin.
- In a medium bowl, add the flour, cocoa powder, baking powder and bicaronate of soda. Mix and set aside.
- In a large bowl, mash the bananas. Add the oil, sugar, maple syrup/honey, vanilla, apple cider vinegar, and milk then whisk together.
- Add the dry ingredients into the wet and whisk until just combined. Add a little more milk if needed. Pour evenly into the loaf tin and bake for 35 minutes, until a skewer inserted in the centre comes out clean. Leave to cool before serving.
