Chocolate brownies
Ingredients

- 2 flax eggs
- 115g brown sugar
- 100g vegetable oil
- 60ml water
- 1 tsp vanilla extract or vanilla bean paste
- 60g cocoa powder
- 110g almond flour
- ½ tsp sea salt
- ¼ tsp baking powder
- 50g dark chocolate chips

To make 2 flax eggs, combine 2 tbsp ground flax seed with 6 tbsp water, whisk then let sit for 10 mins until slightly thickened.

Preheat the oven to 160°C. Line a 8x8 pan with parchment.

In a large bowl, add the flax eggs, sugar and oil and mix until fully incorporated. Add the water and the vanilla and mix for another 2 minutes.

In a separate bowl, combine the cocoa powder, almond flour, baking powder and sea salt. Add to the wet mixture and stir until fully combined, with no lumps. Stir in the chocolate chips.

Pour into the pan and bake for 35-45 minutes. Allow to cool completely before slicing.
