Chocolate chip oat cookies

Ingredients

  • 100g vegan butter
  • 100g caster sugar
  • 100g plain flour
  • 80g wholemeal plain flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 50g jumbo oats
  • 3 tbsp almond milk
  • 80g chocolate, chopped

Directions

  1. Preheat the oven to 180°C. Line a large baking tray with baking paper.
  2. In a large bowl, cream the butter and sugar together until light and fluffy.
  3. In a medium bowl, combine the flour, baking powder and salt. Stir in the oats.
  4. Add the dry ingredients to the wet and mix. Add the almond milk and mix well until the dough comes together. Stir in the chocolate chips.
  5. Scoop out equal amounts of dough onto the tray and press down slightly. Bake for 12-15 minutes, until golden.
