Chocolate chip rice flour cookies
Ingredients

- 200g rice flour
- 120g caster sugar
- ½ tsp baking powder
- Pinch of sea salt
- 50ml vegetable oil
- 1 tbsp vanilla extract
- 6 tbsp aquafaba
- 75g dark chocolate chips
Directions
- Pre-heat the oven to 160°C. Line two baking trays with baking paper.
- In a large bowl, combine the flour, sugar, baking powder and salt into a bowl and mix well.
- In a measuring jug, whisk together the oil, vanilla extract and aquafaba. Add to the dry ingredients and mix well.
- Using your hands, gather everything together into a dry dough. Add the chocolate chips and work them into the dough.
- Spoon 6-8 balls of dough onto each prepared baking tray, leaving space between each.
- Bake for 18-20 minutes until the cookies are light brown on the edges and still slightly soft in the middle.
- Leave to cool for 5 minutes then transfer the cookies to a cooling rack.
