Chocolate chip rice flour cookies

Ingredients

makes 12-16
  • 200g rice flour
  • 120g caster sugar
  • ½ tsp baking powder
  • Pinch of sea salt
  • 50ml vegetable oil
  • 1 tbsp vanilla extract
  • 6 tbsp aquafaba
  • 75g dark chocolate chips

Directions

  1. Pre-heat the oven to 160°C. Line two baking trays with baking paper.
  2. In a large bowl, combine the flour, sugar, baking powder and salt into a bowl and mix well.
  3. In a measuring jug, whisk together the oil, vanilla extract and aquafaba. Add to the dry ingredients and mix well.
  4. Using your hands, gather everything together into a dry dough. Add the chocolate chips and work them into the dough.
  5. Spoon 6-8 balls of dough onto each prepared baking tray, leaving space between each.
  6. Bake for 18-20 minutes until the cookies are light brown on the edges and still slightly soft in the middle.
  7. Leave to cool for 5 minutes then transfer the cookies to a cooling rack.
