Eton mess

Ingredients

serves 2-4
  • 16 meringue drops (see recipe)
  • 100g vegan double cream (Elmlea)
  • 1 tsp icing sugar
  • 10-12 medium strawberries, sliced

Directions

  1. In a medium bowl, add the vegan double cream. Using a hand mixer fitted with whisk, whip the cream on medium for 30 seconds. Add the icing sugar and whip at a high speed until the mixture has stiff peaks.
  2. Assemble the Eton mess either in one large bowl or individual portions. Place half the meringues at the base. Spoon half the whipped cream on top. Place half the strawberry slices around the edges, and a few in the centre.
  3. Add the remaining meringue drops on top, followed by the whipped cream then strawberries.
  4. Place in the fridge for at least an hour before serving.
