Peppermint frosting
Ingredients
1 cake or 12 muffins
- 90g vegan butter
- 250g icing sugar, sieved
- 1½ tsp peppermint extract
- 1-2 drops green food colouring
Directions
- Using a mixer, beat the butter until light and fluffy.
- Gradually beat in the sugar. Add the peppermint extract and food colouring. Blend until whipped and creamy.
- Spread or pipe on top of the cake, and add your favourite mint chocolate toppings to decorate.
