Peppermint frosting

Ingredients

1 cake or 12 muffins
  • 90g vegan butter
  • 250g icing sugar, sieved
  • 1½ tsp peppermint extract
  • 1-2 drops green food colouring

Directions

  1. Using a mixer, beat the butter until light and fluffy.
  2. Gradually beat in the sugar. Add the peppermint extract and food colouring. Blend until whipped and creamy.
  3. Spread or pipe on top of the cake, and add your favourite mint chocolate toppings to decorate.
