Scones
Ingredients

- 180g sultanas or raisins
- 250ml boiling water
- 550g self-raising flour
- 75g caster sugar
- 1 tsp baking powder
- 115g vegan butter
- 300ml oat milk
Directions
- In a small bowl, add in the dried fruit then the boiling water and set aside.
- Preheat the oven to 180°C. Line 2 large baking trays with baking paper.
- In a large bowl, combine the flour, caster sugar and baking powder. Add the butter and rub together with your fingertips until it starts to look like breadcrumbs.
- Drain the dried fruit, then stir into the flour mixture. Add the milk a little at a time until the mixture comes together. Add some more flour if the dough becomes too wet.
- Place the dough on a floured surface and roll out to about 2cm thick. Using a round cutter, cut out the scones. Place on the prepared baking tray, then brush with milk. Bake for 20 minutes or until risen and golden.
