Scones

Ingredients

  • 180g sultanas or raisins
  • 250ml boiling water
  • 550g self-raising flour
  • 75g caster sugar
  • 1 tsp baking powder
  • 115g vegan butter
  • 300ml oat milk

Directions

  1. In a small bowl, add in the dried fruit then the boiling water and set aside.
  2. Preheat the oven to 180°C. Line 2 large baking trays with baking paper.
  3. In a large bowl, combine the flour, caster sugar and baking powder. Add the butter and rub together with your fingertips until it starts to look like breadcrumbs.
  4. Drain the dried fruit, then stir into the flour mixture. Add the milk a little at a time until the mixture comes together. Add some more flour if the dough becomes too wet.
  5. Place the dough on a floured surface and roll out to about 2cm thick. Using a round cutter, cut out the scones. Place on the prepared baking tray, then brush with milk. Bake for 20 minutes or until risen and golden.
