Simple vanilla cake

Ingredients

  • 285g self-raising flour
  • 150g granulated sugar
  • 20g cornflour
  • ¾ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp sea salt
  • 375ml soya milk
  • 155ml vegetable oil
  • 2½ tbsp apple cider vinegar l
  • 2 tsp vanilla extract
  • 150g jam, such as strawberry or raspberry

Directions

  1. Preheat the oven to 180°C. Prepare two 18cm round cake pans.
  2. In a large bowl, mix together the flour, sugar, cornflour, baking powder, baking soda and salt.
  3. In a measuring jug, whisk together the milk, oil, vinegar and vanilla extract.
  4. Add the wet ingredients to the dry and mix until combined. Divide the batter evenly between the prepared cake pans and bake for 32-35 minutes, until a skewer inserted into the centre comes out clean. Leave to cool before assembling.
  5. Spread the jam on one cake layer, then add the top cake layer.
