Simple vanilla cake

Ingredients

- 285g self-raising flour
- 150g granulated sugar
- 20g cornflour
- ¾ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp sea salt
- 375ml soya milk
- 155ml vegetable oil
- 2½ tbsp apple cider vinegar l
- 2 tsp vanilla extract
- 150g jam, such as strawberry or raspberry
Directions
- Preheat the oven to 180°C. Prepare two 18cm round cake pans.
- In a large bowl, mix together the flour, sugar, cornflour, baking powder, baking soda and salt.
- In a measuring jug, whisk together the milk, oil, vinegar and vanilla extract.
- Add the wet ingredients to the dry and mix until combined. Divide the batter evenly between the prepared cake pans and bake for 32-35 minutes, until a skewer inserted into the centre comes out clean. Leave to cool before assembling.
- Spread the jam on one cake layer, then add the top cake layer.
