Sourdough Chocolate Cake

Ingredients

makes 1 cake
  • 150g self-raising flour
  • 25g cocoa powder
  • 1 tsp bicarbonate of soda
  • ½ tsp salt
  • 120g caster sugar
  • 120g discarded starter straight from the fridge
  • 120ml cold water
  • 1 tbsp apple cider vinegar
  • 2 tsp vanilla extract
  • 80ml vegetable oil
  • 3 tbsp aquafaba

Directions

  1. Preheat the oven to 180°C. Grease and line a cake tin or loaf tin.
  2. In a medium bowl, combine the flour, cocoa powder, baking soda, salt and sugar.
  3. In a large bowl, whisk together the starter, water, vinegar, vanilla extract, oil and aquafaba. Add the dry ingredients to the wet, and stir until combined.
  4. Pour the batter into the tin and bake for 25 to 30 minutes or until a skewer inserted in the centre comes out clean.
