Strawberry jam filling

Ingredients

serves 1 cake
  • 450g fresh strawberries, stems removed
  • 150g granulated white sugar
  • 2 tbsp lemon juice

Directions

  1. Add strawberries to a food processor and pulse until puréed.
  2. In a saucepan, add the strawberry purée, sugar and lemon juice. Simmer on medium-low heat for 20-25 minutes until very thick.
  3. Remove from the heat and allow the jam to cool completely.
